We are now looking for an exceptional Head Chef to lead our kitchen team and take our Mediterranean offering to the next level.

The Role

As Head Chef at Lido Troon, you’ll lead a talented brigade in a fast-paced, high-volume kitchen where flavour, consistency and theatre matter. This role requires a confident, commercially aware leader who understands Mediterranean cooking at its heart, from beautifully balanced seafood dishes to wood-fired meats, vibrant small plates and seasonal specials.

You’ll bring passion, discipline and creativity to the pass, ensuring every dish captures the energy and authenticity of the Mediterranean while delivering strong commercial performance.

You will:

• Oversee all kitchen operations with precision and pace
• Drive authentic Mediterranean menu execution across seafood, grill and seasonal dishes
• Champion fresh ingredients, bold flavours and beautiful presentation
• Manage GP, stock control and labour performance in line with targets
• Lead, coach and develop your brigade, building a high-performing kitchen culture
• Work closely with the senior team on innovation and menu development
• Maintain a safe, compliant and highly organised kitchen environment
